Chocolate Coconut No-Bake Cookies
No-bake cookies are an easy and delicious dessert any time of year, but they're especially great during the holidays. This recipe tastes just like the traditional no-bake cookie, but is sugar-free and keto-friendly.

2 Heaping Tbsp. Peanut Butter 1 ½ Cup Unsweetened Shredded Coconut 4 Ounce Bakers Chocolate Unsweetened 100% Cacao 1 Heaping Tbsp. Coconut Oil ⅔ Cup Erythritol 1 Teaspoon Salt
Melt chocolate, peanut butter, coconut oil, and sweetener in a saucepan on low heat.
Add coconut and stir until completely combined. Keep adding coconut until all of the melted chocolate mixture is soaked up.
Scoop mixture into piles on wax paper or tin foil.
Place the cookies in the freezer for an hour to set.
