Chocolate Coconut No-Bake Cookies

No-bake cookies are an easy and delicious dessert any time of year, but they're especially great during the holidays. This recipe tastes just like the traditional no-bake cookie, but is sugar-free and keto-friendly.

Ingredients

  • 2 Heaping Tbsp. Peanut Butter
  • 1 ½ Cup Unsweetened Shredded Coconut
  • 4 Ounce Bakers Chocolate Unsweetened 100% Cacao
  • 1 Heaping Tbsp. Coconut Oil
  • Cup Erythritol
  • 1 Teaspoon Salt

Instructions

  • Melt chocolate, peanut butter, coconut oil, and sweetener in a saucepan on low heat.
  • Add coconut and stir until completely combined. Keep adding coconut until all of the melted chocolate mixture is soaked up.
  • Scoop mixture into piles on wax paper or tin foil.
  • Place the cookies in the freezer for an hour to set.
