Ingredients
- 2 slabs pork spare ribs 3 pounds each
- 1 batch keto rib rub
- Keto or low-carb BBQ sauce of your choice I used Primal Kitchen
- 1 red bell pepper
- steak knife
Instructions
- Remove the thin white membrane off of the bone-side of the ribs.
- Massage rib rub into the ribs and let sit for 1 hour or up to overnight.
- Place the rubbed ribs in a roasting pan with a rack. Slather the ribs with barbecue sauce and tent a piece of aluminum foil over them.
- Place the ribs in a preheated 350 degrees F. oven, basting with the sauce every 30 minutes. Cook ribs until fork-tender, about 2 ½ to 3 hours. Remove the foil for the last 30 minutes.
- Cut ribs apart and arrange on a cutting board in the shape of a human rib cage.
- Cut the red bell pepper in half and place one half in the middle of the two sides of the rib cage, similar to where the heart may be.
- Stab the knife into the pepper and into the cutting board so it stands up.
