Who says cauliflower has to be boring? It's delicious if you cover it in cheese, cream , and bacon! Spice up your cauliflower with this great cheesy bacon cauliflower side dish recipe.

I served this on the side of pork steaks, and it reminded Blake of mac n' cheese. He ate the whole pan! I'll definitely make it again when he's craving mac n' cheese.

I don't think you can get the same level of decadence in this dish with dairy-free conversions. But you can definitely try. I'd probably use Daiya cheese, cashew milk, and tasteless coconut oil as my dairy-free substitutions. I haven't tried to make a dairy-free version of cheesy bacon cauliflower, so if you try it, come back and let me know how it goes!

This would make a great side dish alongside any main dish. It's fantastic with pork and I think it would pair well with garlic rosemary cornish game hens. I also think it would be an awesome side dish at your keto Thanksgiving celebration.

This dish is so rich and decadent, it's the perfect side dish for any main course that is on the lean side. I wouldn't serve it alongside fattier cuts like duck or lamb, but it would go very well with chicken or turkey breast.

Cheesy Bacon Cauliflower (Keto, GF, Low-Iron)

This cheesy bacon cauliflower is a surprisingly great substitute for mac n' cheese. Who knew cauliflower could be so good!

Ingredients
  

  • 1 Bag frozen cauliflower
  • ¼ Cup chives
  • 8 Oz. shredded cheddar cheese
  • 4 Oz. heavy cream
  • Salt and pepper to taste
  • ¼ Cup butter
  • Crumbled cooked bacon

Instructions
 

  • Run cool water over frozen cauliflower and strain.
  • Butter casserole dish.
  • Place cauliflower in the dish.
  • Season with salt and pepper.
  • Layer chives, bacon, sliced pats of butter, and cheese.
  • Pour cream over and bake 45 minutes at 350 degrees.
